Closing the restaurant is just as important as opening and Mise en place. It's to make sure that the teammembers the day after can have a good start of their day as well and no unpleasant surprices.
This Manual has been writen by Emira. Please ask your manager if you have any questions about it.
Make sure the following tasks for the bar have been completed for closing the restaurant
Prepare a clean soap, with hot water
Clean the fresh orange juice machine
Refill the coffee beans
Refill the oatmilk
Clean the coffee machine with the correct products
Clean the Washing area
Wash the last glasses in the machine. Take the filter out of the machine. Drain the Glass Machine and clean the inside of the machine
Clean the Deli, and make sure items are covered with plastic foil
Cover all bakery items. Brownie out side the deli, babka you cover and but inside the deli/ fridge.
Left over croissant are put in a paper bag and put into the freezer for making breadpudding
Clean the stolps of the bakery items
Clean the tang and all knifes
Refill your bar fridges
Clean the whole bar
Sort out the empty bottles (cola ect)
Bring the Glass to the glassbin
Make a list of items missing for the next day (Brownie ect)
Empty all tables
Clean all tables
Take out any remaining cutlery out of the mugs and put them back in the cutlery section
Blow out the candles, leave them for a minute on the table and remove them from the tables. put them back where they belong
refill the lugs with napkins
put the chairs and barstools on the tables
Lock all tables and chairs of the terras
Put the Yellow bench inside
Put the trashcan inside if you restaurant has one, and empty it!
Take any other restaurant condiments inside (mugs, umbrellas, ect)
Take the sidewalk sign inside
Switch off music
Plug in all digitals (BC, iPads, Delivery device, ect)
Turn off all lights (application or switch)
Make sure there nothing on the floor for the cleaning company
Put on the alarm if there's one in the location
Make sure the door is propperly closed behind you when you leave the restaurant
